  • 250 ml (9 fl oz/1 cup) vegetable oil

Method

Put the oil in a wok and heat to 180°C (350°F), or until a cube of bread dropped in the oil browns in 15 seconds. Add the garlic to the oil and fry until it is a golden colour, strain through a metal sieve and then place it on a paper towel to dry. Be careful not to overcook the garlic in the oil, as it continues to cook once it is removed. Reserve the garlic oil to add to salads.
