Luke Nguyen: Pennywort leaves have a slightly bitter taste, which the prawns (shrimp) in this soup offset well. The juice of the leaf, when cooked in water, strained and with sugar added, also makes for a refreshing and healthy drink. Pennywort leaves are known to relieve the pain of arthritis.
