Method

Mix the Chinese red food colouring with 1 tablespoon of cold water and mix to dissolve. Brush onto the pork belly until well coloured. Combine the soy sauce, five-spice, garlic and salt. Massage this mixture into the pork, then leave to marinate for 1 hour.

Bring the coconut juice to the boil in a large saucepan over high heat. Meanwhile, lay the pork flat, skin side down, and roll up t
