Luke Nguyen: This is a great dish to share at the table. Have plenty of butter lettuce, perilla and mint available, along with some vermicelli noodles and rice paper. Once the fish is cooked, roll pieces of fish with the salad and noodles in rice paper and dip in the anchovy and pineapple sauce. Be warned: the sauce is strong and pungent — it is an acquired taste.
