Lay the bitter melon flat on a board and cut it in half across the middle. Take a spoon and hollow out the centre of the melon. Fill with the cha gio chay stuffing and wrap in plastic to seal. Place in a steamer and steam over high heat for 20 minutes, remove and allow to cool, then place in the refrigerator for 30 minutes. This makes it easier to slice later.
