Wash the duck leg quarters under cold water, pat dry with paper towel, then place on a cutting board. Trim and discard the excess fat. Add the white part of the spring onion, garlic, ginger, fish sauce, soy sauce and sugar to a large bowl and mix well to dissolve the sugar.
