Smoked Salmon and Cream Cheese Sandwiches

This is the king of sarnies. It’s the one that always disappears first from the sandwich platter. Smoked salmon and cream cheese is, famously, also brilliant on bagels, but this is an afternoon tea and we don’t do bagels at that time of day, do we? No, we want a slim, soft, salty, pale-pink-and-white sandwich. Fantastic mouthfeel. And it deserves a decent smoked salmon within it. I know it’s tempting to buy cheap scraps but, if you can afford to, buy some good stuff (I even smoke my own, as
