Scones are the source of much dispute: from how to pronounce the word - ‘scon’, ‘scohne’ or even ‘skoon’ - to whether you put the clotted cream or the jam on first. In Cornwall, the jam goes first: in Devon, the cream. Ergonomically; it makes sense to put the jam first, but visually I go with Devon’s thick knot of clotted cream punctuated sharply with a dollop of crimson jam!
