Crumpets

Lots of people are making crumpets these days, but the real trick is to get enough holes into them. Flat crumpets have nowhere for the butter to sink into! I love crumpets with Mar mite, but you could also reserve a little of the batter to make flavoured crumpets with orange-blossom water and spread them with honey. You can go free form or use greased crumpet or egg rings to get the perfect shape.
