Swan Pavlovas

The pavlova was named after the legendary Russian ballerina Anna Pavlova during her tour of Australia and New Zealand in the early 20th century. Both countries fight over whose dish it is. Anna Pavlova’s greatest role was as the dying swan. Anna wasn’t the best technical dancer, but her slim ankles, delicate long limbs and frail demeanour entranced audiences.
