This is the ultimate pièce montée and something I think every keen home baker should have a go at. Don’t do it on a rainy or humid day or it will kill over and melt. Bake and fill your choux buns first, then construct the tower at the last minute. You can freestyle, piling them on top of one another in a pyramid, or buy a special mould covered with non-stick paper - you slide out the pyramid when you’ve finished constructing.
