Fleur de Sel Caramels

These are a bit scary to make (it seems to take ages for the caramel to heat up to the right temperature), but if you summon up the courage, the results are very gratifying. When I served these toffees wrapped in wax paper twists at an 18th-century-style tea, they disappeared in minutes. I think people were stuffing their pockets with them.
