Do you remember those wonderful cherry liqueur chocolates ‘Mon Chéri’ packaged in their characteristic Valentine-red box? I used to ask for them in my Christmas stocking every year. This is like a bottle of the stuff inside the chocolate: rich, sweet and slightly bitter from the cherry stones.
Rinse the cherries but leave about a centimetre of stalk on each one. Retaining the stalks means the cherries will remain firm. Layer the cherries with the sugar in the sterilised jar and pour over the alcohol. Seal the jar, then leave in a dark cupboard at room temperature and turn every day for a week; this is a recipe that only gets better and stronger, the longer you leave it.
