You can do more things with tea leaves than just boil them. Here is a tea-infused cocktail, which looks beautiful served from a glass teapot. Astringent and refreshing on a summer’s day; add a strip of pared lemon rind and a spoonful of sugar to each cup.
Infuse the vodka by adding the tea leaves to the bottle of vodka and leaving it to marinate for 2 days. Strain, discarding the tea, and then return the vodka to the bottle. Leave the tea-flavoured vodka in the freezer for a couple of hours before serving.
