Sipping vinegars have been around for hundreds of years. In fifteenth-century England, they were even used to treat ailments like scurvy. In modern times, shrubs or sipping vinegars are mostly used as a base for a refreshing drink or cocktail. They are a great way to get a second use out of overripe fruit. This recipe uses rhubarb and strawberries, but you can certainly experiment with other flavor combinations.
