Lettuces and radishes tend to mature around the same time. My first salad of the growing season will typically feature lettuce, radish, and the first clippings of delicate herbs from my perennial herb patch.

Ingredients

  • 1–2 heads of a delicate lettuce such as bibb or butterhead, leaves separated, washed, and spun dry
  • 6–8 radishes

Method

Instructions

  1. In a mason jar, combine extra-virgin olive oil, red wine vinegar, chives, Dijon mustard, and honey (or maple syrup). Using an immersion blender, process until you get a smooth and emulsified dressing. Season to taste.
  2. On a serving platter, layer lettuce leaves and radish slices. Drizzle on as much or as little dressing as you would like.
