Most Mediterranean spinach salads call for cooking the spinach before dressing it with oil and vinegar or lemon. Sometimes garlic is added to the dressing, and sometimes chopped nuts or pomegranate seeds are used as a garnish. This Greek Sephardic salad from Thrace is unusual in that it is made with uncooked spinach.
