The name translates as “Passover toast for the new mother, ” but if this recipe from Sefarad Yemekleri reminds you of matzoh brei (omelet), you would be almost right. In this Turkish Sephardic dish, however, each matzoh is broken into four squares, soaked in lightly salted water, and then dipped in pairs in beaten egg and fried. The hot squares are topped with either grated cheese or, for a sweet desayuno version, with syrup or honey.
