In her book on the food of the Ma’min Jews of Salonika, Esin Eden offers this tomato soup recipe, but she uses butter with chicken stock. Members of the Ma’min sect, followers of Shabbatai Zevi, eventually became Muslims. Although their recipes carry a Jewish heritage, they have a casual disregard for the no-dairy-with-meat rule. I have adjusted this recipe and others to stay within the kosher laws. If you prefer butter over margarine or oil, use vegetable stock in place of the chicken stoc
