Flan is the classic Spanish dessert, a custard usually prepared with cream or milk, eggs, and flavoring. This Sephardic version, however, uses orange juice instead of milk or cream, permitting it to be served after a meat-based meal. The texture may seem a bit odd at first, especially if you are partial to cream-based custards.
