This is a sauce reminiscent of a sauce tartare and is meant to be a mayonnaise made with boiled eggs. Not finding this boiled egg mayonnaise as exciting as I’d hoped, I have made my own cheat version which I find delicious with everything from steak to grilled fish, cold meats and salted beef.
Boil the eggs in water for 8 minutes, then immerse in ice water to cool completely. Peel the eggs, then chop them finely.
In a medium bowl, combine all the ingredients and season with salt and black pepper to taste. You may want to add more crème fraiche or mayo to your taste.
