Vietnam: surely a gourmet destination, where bunches of fresh herbs are served on the table at every meal, so that you can pick leaves and add them to whatever you are eating. I need to go there! This salad is a perfect foil for any rich dish.

Ingredients

2 long English cucumbers, peeled and very finely sliced

Method

Combine all the dressing ingredients in a jug and stir together until the sugar dissolves. Stir the dressing into the cucumbers in a mixing bowl.
