Fennel is surely one of my favourite vegetables. This confit is a splendid thing to have in your fridge to serve, warmed as an accompaniment, with most any dish! It is superb with the Anchovy-Stuffed Tuna and terrific on a blanco pizza with pine nuts or salsiccia. My friend Massimo introduced me to this favourite combination at his pizzeria in Hout Bay.
