Why not make your own? With a growing awareness of the goodness of microbes in all things pickled, fermented, sprouted and cultured, adding a little of your own to meals is surely a satisfyingly healthful idea! One that will impress your guests too!

Ingredients

  • 500 ml of pouring cream
  • 1 tbsp plain yoghurt, buttermilk or crème fraîche

Method

Whisk the cream and yoghurt together in a bowl, then pour into a clean glass jar. Put the lid on and leave in a warm spot for 24 hours to culture.

After this time, the cream will have thickened and become slightly sour. Store the sealed jar in the fridge where it will thicken some more. The resulting Crème Fraîche will keep in the fridge for up to 2 weeks.
