A clean Asian dressing like this is so versatile. A playful catalyst, it cuts through excess richness but brings a little heat and warmth as well.
Put the soya sauce, rice vinegar, grated ginger, sugar and wasabi paste into a jar with a tight lid and shake vigorously to mix. Shake away, making sure that the sugar dissolves in the liquid and that the wasabi paste has dissolved too. When you are happy with it, add the sunflower and sesame oil and mix vigorously again. Adjust seasoning to taste.
Excellent with a simple salad of soft
