I keep a little jar of this in my fridge. The dilithium that keeps my space ship powered. I call black garlic “Umami Crack”. It is made by heating whole bulbs of garlic over the course of several weeks, a process that results in black cloves with an intense caramelised savoury flavour. You may have noticed, I also have a fondness for horseradish. To my delight, you can buy both these foodie items in the supermarket nowadays.
