This Zingy Sauce is great with beef carpaccio, on a rocket salad with Parmesan, and is a handy sauce for fish or chicken or a poached egg! It completes the Koeksister-ed Duck with a flourish!
To make the Green Sauce, allow the onion, vinegar, salt and sugar to sit in a bowl together for 20 minutes, then stir in the herbs, olives and olive oil. Adjust seasoning to taste.
