Name: Cauliflower, Apple, Date & Rocket Salad

Ingredients: 1½ tbsp nigella seeds (black onion seeds); squeeze of lemon juice (optional); salt and white pepper to taste; ¼ cup tahini; ⅓ cup cloudy apple juice; 3 medium Granny Smith apples; salt and black pepper to taste; 2 medium cauliflowers; juice of 1 lemon; 1 cup dates, sliced; 1 clove garlic, crushed; 200 g rocket; ½ cup olive oil; 180 g whole almonds, toasted

My thanks go to Hugh Fearnley-Whittingstall for this inspired salad. Interestingly the rocket is the key to its success! It is a surprisingly good accompaniment to most meat and chicken dishes.

Ingredients

2 medium cauliflowers
3 medium Granny Smith apples
1 cup dates, sliced

Method

To make the dressing, whisk together the tahini, olive oil, apple juice and lemon juice until smooth and creamy. Stir in most of the nigella seeds and the crushed garlic and season with salt and white pepper. Set aside.

Cut the cauliflower into very small pieces, about 2 cm, and very finely
