Cauliflower Agrodolce with Pine Nuts

Name: Cauliflower Agrodolce with Pine Nuts
Yield: Serves 8
Ingredients: 200 ml good sherry; 3 medium onions, cut into 2 cm wedges; 8 sprigs of thyme; 2 large heads of cauliflower, cut into florets; 6 tbsp olive oil; salt and black pepper to taste; 1 tsp cinnamon; 2 tsp cumin seeds; ¼ tsp chilli flakes; ½ tbsp sherry vinegar (or red wine vinegar); 4 garlic cloves, finely sliced; small handful Italian parsley, roughly chopped; flaked sea salt to taste; juice of ½ a lemon; 2 tbsp pine nuts, toasted
