Cauliflower Agrodolce with Pine Nuts

Name: Cauliflower Agrodolce with Pine Nuts

Ingredients: juice of ½ a lemon; small handful Italian parsley, roughly chopped; flaked sea salt to taste; 2 tbsp pine nuts, toasted; ½ tbsp sherry vinegar (or red wine vinegar); 200 ml good sherry; 8 sprigs of thyme; ¼ tsp chilli flakes; 2 large heads of cauliflower, cut into florets; salt and black pepper to taste; 2 tsp cumin seeds; 1 tsp cinnamon; 6 tbsp olive oil; 4 garlic cloves, finely sliced; 3 medium onions, cut into 2 cm wedges
