Angostura Sweet Potatoes

Ingredients: 15 small sprigs of thyme; 4 tbsp sweet chilli sauce; 2 tbsp olive oil; 1½ tbsp Angostura bitters; ½ cup crème fraîche; 1½ tsp salt; 2 chillies slit open across the centre; 1 medium orange, cut into 3 mm slices; 6 large “red” or orange sweet potatoes, scrubbed and cut into 2.5 cm wide wedges; 2 heads of garlic, halved horizontally; ½ cup soft brown sugar; 5 tbsp red wine vinegar; 4 tbsp vegetable oil; 1¼ cups orange juice

Angostura bitters, usually added to your G & T or Screwdriver Cocktails, is harnessed here to deepen the orangey-ness of these sticky, sweet potatoes. A secret: a few splashes of Angostura in a fruit salad take it to a new level! Adapted from the inimitable Ottolenghi, the garlic-orange stickiness of this salad is tamed by dollops of crème fraîche.
