This recipe yields a ton of shredded meat, but you’ll be thrilled to have leftovers for making tacos later in the week. The pork is roasted simply, with just olive oil, garlic, salt, and pepper, but the charmoula, a North African sauce that’s spooned over the meat, really makes this dish sing. Extra charmoula is terrific with scrambled eggs.
