Acorn squash halves make an excellent vessel for a hearty dish, and you can swap in any ground meat for the lamb. Roasting the squash halves before filling them with the meat mixture ensures they will be completely tender. Pomegranate seeds add color and crunch. To round out the meal, serve a simple green salad with a citrus vinaigrette.
