This recipe calls for using half a box of puff pastry. But do yourself a favor and double the recipe, then freeze half of the unbaked empanadas for a future meal (they freeze beautifully). Just before baking, brush the frozen empanadas with the egg mixture and increase the baking time by 5 to 6 minutes.

  • 1 bunch broccoli rabe, thick stems trimmed
  • 2 tablespoons olive oil
  • Kosher salt and freshly groun

Method

  1. Preheat the oven to 425°F (220°C). Line two sheet pans with parchment paper.
  2. In a bowl, toss together the broccoli rabe and oil, and season with salt and pepper. Place the broccoli rabe in a single layer on one of the prepared pans and set aside.
