The recipe that follows takes about 20 minutes plus 3 hours’ draining and setting time, and serves 6. You may spice the cheese by adding 1 teaspoon olive oil, 1 teaspoon rosemary or mint, and 1 teaspoon thyme to the reserved liquid in the final step.

Method

  1. Bring the milk to a boil in a large, non-reactive pot set over low heat. Stir in the cup of yogurt, optional salt and lime juice, and simmer gently for 3 to 5 minutes, until the mixture turns yellow.
