  • 1 pound Chinese egg noodles (or rice noodles or mung bean vermicelli)
  • 2 large carrots, peeled and shredded

Method

  1. Bring 2 quarts of water to a boil and add the noodles. Cook for 1 to 8 minutes (depending on your noodles and instructions on the packet) until tender, drain, rinse and transfer to a serving dish. Add the carrots, sweet pea pods and scallions, and set aside.
