Tarkhineh (also called tarkhanah and kishk) was a perfect cereal combination for nomads and travelers along the Silk Road. It is made by mixing bulgur with yogurt or milk and allowing it to ferment. It is then salted, sun dried and formed into sheets or pellets. These can then be crumbled in water to make soups, eaten on their own, or eaten with honey or jam as a breakfast cereal.
