I am calling this a Silk Road omelet because it is popular throughout much of the region from Uzbekistan and Iran to Turkey and Spain. Even though tomatoes are a New World food, they have been adopted by these countries as their own.

Ingredients

  • 4 eggs
  • 2 tablespoons milk
  • teaspoon salt

Method

  1. To make the batter, break the eggs in a mixing bowl. Add the milk, and salt, and whisk for 20 seconds (about 20 strokes).
