Glutinous rice is misnamed: The rice contains no gluten. It is a variety that is high in amylopectin, a starch that makes the grains stick together when cooked in water. So the best way to cook this rice is by steaming it.

Ingredients

  • 2 cups long-grain Thai sticky rice (long-grain, sweet glutinous rice)
  • 2 tablespoons toasted sesame seeds</

Method

  1. Wash the rice by placing it in a large container and covering it with water, then pour off the water. Continue until the water being poured off is clear. Drain in a fine-mesh colander.
  2. Cover rice with 6 cups cold water and soak for 8 hours or overnight, until the rice
