Remove the stalks from the eggplants and slice them into ¼-inch-thick-by-3-inch lengths.
Arrange the eggplant slices on an oiled baking sheet and brush both sides with a little oil. Cook each side under the broiler for 2 minutes or until golden brown (alternately, you can bake the eggplant slices in a 500°F preheated oven for 15 minutes).
