  1. 1 cup liquid whey (kashk)*
  2. ½ cup shelled walnuts, picked over and toasted

Method

  1. Purée all the ingredients in a food processor and transfer to a medium saucepan. Cook over very low heat, stirring constantly, for 5 to 10 minutes, until thoroughly blended. Adjust seasoning to taste.
  2. Just before serving, add your favorite pasta (cooked per the master recipe). Toss thoroughly, with stir-fried zucchini, eggplant, butternut squash, caramelized on
