Pirozhki is the diminutive plural of the Russian word for “pie,” pirog, which comes from pir, meaning “feast.” Pelmeni probably come from the Central Asia from the Persian words gush bareh, jush pareh, dush bareh all of which mean a boiled piece of stuffed dough shaped like an ear.

Method

Heat the oil in a large skillet over medium heat until very hot. Add the onion and stir-fry for 10 minutes, until golden brown. Add the mushrooms and garlic, and fry for 2 minutes longer. Add the dill, tomato and spices, and simmer over medium heat for 5 minutes longer, until all the liquid has evaporated. Remove from heat.
