I ate this wonderful roll in a market in Beijing at a stand run by the young girl in the photograph, who made her pancakes in front of us. As I had bought a couple of her pancakes, she allowed me to photograph her.

Ingredients

Dipping Sauce

  • 1 clove garlic, crushed and peeled
  • 1 teaspoon cornstarch, slaked in ¼

Method

  1. To make the dipping sauce, combine all the ingredients for the sauce in a small saucepan and bring to a boil over medium heat. Remove from heat, transfer to a small serving bowl and set aside.
  2. To make the rolls, divide the mushrooms, lettuce, carrot, cabbage, eggs, herbs, scallions and nuts into 8 equal portions.
