The Hindu Kush are “the Alps” of Central Asia—500 miles long and 150 miles wide. The undulating eastern grasslands are emerald green oases full of small plots of wheat and rice, as well as orchards of mulberries, walnuts, almonds, jujubes and apricots irrigated by glacial snowmelt.

Ingredients

  • 2 cups rice flour
  • 1 teaspoon salt
  • 2 tablespoons

Method

  1. Place the rice flour and salt in a mixing bowl, add the vegetable oil and mix using a rubber spatula. Gradually add the boiling water and the remaining ingredients and mix until you have a soft dough.
  2. Form the dough into a ball, cover and allow to rest for 20 minutes.
  3. Place the dough on a rice-floured surface and turn into a long 2-inch-diameter log.
