Biscotto, from the Latin panis biscoctus, means “bread twice cooked.” A biscotto is perfect for travelers and sailors because it is dry and very hard, and therefore keeps well, often needing to be softened in liquid to be edible. Many an ancient mariner is said to have lost a tooth biting into a biscotto. A tenth-century Arab cookbook gives a recipe for a twice-cooked bread and attributes a Persian origin to it. And C. J.
