Semolina, made from hard durum wheat, can be finely milled to make pasta flour or more coarsely milled to make the semolina grains used here. Semolina cakes like this one are enjoyed everywhere from the Mediterranean to Central Asia. A Greek version includes eggs and flour; an Afghani one is flavored with rose water and made with pistachio and ghee (but no eggs). This Jordanian version is made with tahini and yogurt, and flavored with orange blossoms, as is common throughout the Arab world.
