This Chinese rice pudding, popular for the New Year or Moon Dragon festival, is so named because it is traditionally made with eight preserved fruits. Classical recipes include sticky rice and red bean paste; my adaptation is based on using rice flour, rose water, and saffron, and omitting the paste.

Ingredients

  • 3 eggs lightly beaten
  • ½ cup milk
  • ¾ cup sugar</

Method

  1. Preheat oven to 400°F. Combine the eggs, milk, sugar, vanilla, orange zest, saffron, rose water, coconut milk and salt, and beat for one minute, until pale and creamy. Add the rice flour and baking powder mixture, and beat for 1 minute longer.
