Lokum, meaning “rest for the throat” in Turkish, is the delicate, gummy jelly Westerners call Turkish Delight. It comes in many varieties, most flavored with lime or orange juice, but some with pomegranates, grapes or mulberries. The pink type is usually scented with rose water and the green with mint.

Ingredients

Syrup

  • 2 cups cold water
  • 2 cups sugar
  • 1 tablespoon

Method

  1. Oil a 12-inch-square, nonstick metal pan, dust with cornstarch, and set aside.
  2. To make the syrup, combine the water, sugar, lime juice and rose water in a small heavy-based saucepan. Bring to a boil over high heat, reduce heat to medium and simmer for about 30 minutes, stirring occasionally, until the surface is full of bubbles and a candy thermometer reaches 2
