This type of brittle—made with honey, sugar, oil, and various nuts and seeds such as pistachios, almonds and sesame—has been made throughout the Silk Road region since ancient times. In Italy, it is called croccant (crunchy) and made with almonds; in Iran it is called sohan asali (honey crunch); and in Afghanistan, it is called hasteh-ye shirin (sweet kernel).
