This tea, made with jujubes that were native to China, is a nice example of how good things spread along the Silk Road; it appears throughout Central Asia and is particularly popular in China and Iran.
Boil the water in a medium sauce pan. Add the jujubes and sugar, reduce heat, cover and simmer over low heat for 30 minutes. Keep warm over low heat.
Before serving, pour a glassful of tea and return it to the saucepan to make sure the tea is evenly mixed. Fill each glass or cup with tea. Add sugar to taste.
