This famous summer drink specialty of the Uttar Pradesh province of northern India cools both body and mind. It is traditionally drunk with milk, but I prefer it without.

Method

  1. Heat a large skillet, and toast all the spices over medium heat for 1 minute, until aromatic. (Have a cover handy to stop any seeds from flying out.) Grind the spices in a spice grinder.
  2. Reheat the skillet, and toast all the nuts for 1 minute and grind in a food processor. Add the ground spices and the rest of the ingredients, then puree until you have a smooth
